Coleslaw is one of my favourite summer salads/sides/condiments and although I usually go for the creamy mayonnaise dressed coleslaw, this vinegar based slaw is a great alternative! This coleslaw has a base of shredded cabbage with some carrots and the dressing is the simple combination of oil, tart vinegar, sweet sugar, spicy mustard, and salt. This cole slaw is as easy to make as it sounds; you simply toss the cabbage and carrots with vinegar dressing and enjoy! I like coleslaw as a salad, a side, and especially as a condiment in a sandwich with something like beef barbacoa (pictured)!
Vinegar Coleslaw
A mayo-less coleslaw in a sweet and tangy vinegar dressing!
ingredients
- 8 cups green cabbage, shredded or finely chopped
- 1 cup carrot, shredded of finely chopped
- 1/2 cup apple cider vinegar
- 1/4 cup sugar (or honey)
- 1/4 cup vegetable oil
- 2 tablespoons dijon mustard (optional)
- 1 teaspoon dry mustard
- 1 teaspoon celery seeds
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
directions
- Mix the cabbage and carrots.
- Mix the vinegar, sugar, oil, dijon mustard, dried, mustard, celery seeds, salt, and pepper in a small saucepan over medium heat and stir until the sugar has melted into the sauce, before letting it cool.
- Toss the cabbage and carrots with the dressing and enjoy!
Tip: Let the slaw sit in a container in the fridge for a couple of hours before serving to let the flavours mingle.
Option: Replace some or all of the green cabbage with red cabbage.
Option: Add more vegetables!
Option: Replace the apple cider vinegar with another vinegar or fresh lemon juice, lime juice, etc.
Option: Add any desired spices to the dressing!
Option: Add or replace some of the mustard with grainy mustard.
Option: Add hot sauce to the dressing!
Option: Omit the sugar if you prefer your slaw without any sweetness!
Option: Replace the sugar with brown sugar, honey, maple syrup, etc.
Option: Add fresh chopped herbs such as parsley, cilantro, dill, basil, etc.
Option: Add 1/4 cup onion, grated.
Option: Add sliced green onions.
